What should I sharpen my hockey skates to?

Out of those two, definitely half inch. Being a bigger guy, you are going to dig into the ice more. This will be increased the sharper (smaller radius) you get your blades done. You don't want to dig in too much because it will slow your speed. I would say 1/2 at the most, 3/8 or less if you are a weak skater.
